I have been told that the location of the Habitat Curacao Hotel is off the beaten track somewhat but I was wondering if there are any little places within walking distance to buy basics like milk, fruit & ice cream?

Yes, there are a few,but not on walking distance if i can recall.
If you have a car there are tons of "toko's" (small shops) and "snacks"(roadside shops) within a few miles,that have all basic food and drinks . I'm sure that they can tell you the nearest one at the front desk.

Google Earth makes it between 1.7 and 1.9 miles from Habitat to Wilbrordus. It's a fairly good sized town for that area so it's likely they have a couple toko's.

Habitat is in a housing development but there just wasn't much out there yet that we saw. We bought everything at Centrum supermarket in West Willemsted before driving out.
 
Part of the resort's "charm" is that it is pretty isolated. BUT when I stayed there, I caught one of their shuttles into town to pick up supplies, food and drink. (I agree with you that ice cream is a "basic" by the way!!)
