For something specific like that, you may want to try out the playainfo forum. Its a lot of us "locals" on there. Wood carving will be everywhere by the dozen, but the knife I wouldn't know where to go.

You likely know this, but don't give the locals US coins, even as tips. They can't exchange US coins easily at a bank. This even seems to work with the US Gold Dollar Coins. I've seen on trip advisor people bragging about how happy their waiters are to get the gold coins, but in reality, they can't exchange the coins and would rather have the paper dollar. Have a great trip!!!!
