The videos of the one strolling through the Palancar beach club last July and the poor bewildered one swimming through the Money bar snorkeling area the previous year highlight what not to do. Once frightened and on the run do not chase it with your cell phone to get that perfect video, it can turn around and ruin your day.
Dave you forgot about the American DM spear fishing in the Cancun lagoon last summer. He got mauled pretty badly and had to be evacted out.

We were thinking about doing a night snorkel in front of sunscape sabor, would you recommend against that?

There was a croc inside the ropes of Secrets and Sabor July 2015 swimming parallel to shore for about 45 minutes when we were there.

I would HIGHLY advise against that - in fact, I imagine hotel security would not even let you. I'll also add that there is nothing to see snorkeling in front of that hotel or most of the southern hotels - nothing but sand which is why they have nice beaches.

I guess we won't pursue that idea... though we had heard there were things to see in that location.

Nice beach but no reef within swimming distance. Good snorkeling is just like diving - you need reef to see marine life. There will be a few little bottom feeding fish swimming around in the shallow water in front of the hotel - but you will bore of that in 10 minutes or less :)
 
Having snorkeled at the Sabor I found lobster, eels, barracuda, angels, sergeant majors and damsel fish, etc. We also watched dolphins swimming by our hotel balcony. The fish congregate around man-made materials (concrete slabs - the metal "shark").

I don't know about night snorkeling though.
