Try this link for information about some of the hotels. We stayed at the Wyndham Resort and Crystal Palace Casino last year. It's rather plain but we didn't spend much time there so that didn't matter. When we booked our trip through Stuart Coves the hotel failed to mention some sort of charge per day for using certain facilities (I don't remember exactly which ones) even if you didn't use them. We worked with Stuart Coves and they got that charge removed from our bill promptly. The nice thing about this hotel is that it is on the bus route (#10 I believe) so it's easy to get into town. The bus is a lot cheaper than a taxi and even though I was riding with my husband I would have felt safe riding it by myself. There are a couple of pretty good restaurants nearby, nothing fancy but the food was tasty. The hotel slipped a coupon for free admission to a show under the door early in the week. All you had to do was buy one drink per person and soda counted (a Coke was about $3). The show was well worth more than that and I'm glad we went down to see it.
Everything is incredibly expensive. We would split a banana and a bagel and get a drink for breakfast and it cost about $11 (that's one banana, one standard size--small--bagel a coffee and a milk). You might consider taking along some sort of non-perishable snack items if you want to save a little cash. One group had brought a jar of peanut butter and a loaf of bread.
Has your wife considered trying the Subs at Stuart Coves? They look a bit like mopeds with bubble helmets on them and a scuba tank attached. Looked like they might be fun we just didn't have time to try them.
There are a lot of wrecks that Stuart Coves goes to, most are pretty nice too.
