How do I adjust the camera screen to display what is being seen vs what the camera thinks it will look like based on the setting? I am having a hard time seeing what I am shooting as the monitor is so dark. I think my old Olympus OM-2 M2 had a setting for the screen but I don't remember what it was.

Turn on Live View Boost. In your menu, go to the Cog (Custom Menu) and look in the C1 submenu. You can turn on Live View Boost there.
 
I use "S-OVF" mode, which basically ignores the aperture setting. Cog -> Live View.

The night vision setting is also on that menu.
