I have a few Freedom Plates for sale.

I have the new Contours on sale for $199.00 - introductory offer.
(After a time they will go back up to regular price of $225.00)

I also have a few standards which are $179.00

There are small and large plates.
The small plates fit people from about 5'2" - to about 6' - they are 14.5' tall x 9" wide and weigh 3 lbs.
The large plates fit people from about 5'7" - to about 6'6" - they are 16" tall x 13" wide and weigh 4 lbs.
Both sizes are the same price (in each category - contour or regular)

Looks good. My internal debate is raging right now.
 
So if I am a 5"10 ectomorph (skinny), which plate would you recommend?

Also, how hard would it be to drill two holes in the plate? While I realise it's a singles plate, I normally bolt my singles wing down to keep it flopping around on the CAM straps.

You could use either one, but a large would be nice.
I can bend the waist to a tighter curve for you so it doesn't stick out on the sides.

I wouldn't drill holes, instead I would run a zip tie through the wing slots and around behind the rod rails of the plate to hold the wing on (for convenience). I did this and the cool part is that the wing stays put but still slides up and down so I can still adjust everything where you want it before you cinch the cam bands.
When I'm done diving for the day I just clip the zip tie loose and take everything apart to clean it.

The other problem with drilling holes and using nuts or bolts is: that the plate fits so tight and nicely to your back there are no voids or a channel to hide bolt heads and the tank fits so close to the plate that there is no room between the tank and plate to fit a nut.
That's part of the design is to get the tank as close as possible to the diver and as a result a few features like securing a wing for convenience kind of went out the window in the name of streamlining.
