Just got a Canon T2I and I am going to the Key's at the end of this month. It is my first DSLR. Trying to get a few pointers on settings if possible. Should I be shooting in raw + jpeg? What about camera settings what will be the best to start off with? Possibly AP mode and keep iso around 200??? Any help appreciated.

Yes, you should be shooting RAW. The raw files will have a lot more data in them for post-processing and as such potentially give you significantly better "end-products". As for settings I cant say on that specific camera, but generally Id say take a lot of pictures on land WITH the UW housing so that you know how to use the cameras functions before you go diving.
