How do I tell the difference between a Luxfer 80 vs Luxfer S80? I posted a picture of my tank.

same thing. You'll see their "short" 80's that are 8" diameter instead of 7.25" but that looks like a normal 80. I think the dozen or so that I have all say S80 on them despite being normal 80's
 
measure the tank to be sure. either height or diameter/circumference. at some point luxfer renamed their tank lineup and the original 80 became the S80 while the old 8 inch S80 got discontinued.

What difference are you thinking the "S" denotes? Currently, and I think historically, Luxfer just labelled all of their scuba cylinders with the S followed by the cf volume.
If you are trying to determine how to tell a neutral 80, the service pressure is 3300 instead of 3000. The catalog designation is S80N, but I don't know if they also stamp the N on the cylinder.
 
@JackD342 If you go to the Huron tank chart, and many others they list a S80 from Luxfer as a short 80 which was 8" in diameter and had different buoyancy characteristics. As @runsongas said, sometime around the time they discontinued that short 80, they changed their naming conventions and now S80 is used for a normal 80.
 
I ask because the luxfer s80 vs the luxfer 80 have different buoyancy characteristics according to the charts. Huron Scuba, for instance shoe the s80 becoming more positively buoyant towards the end of a dive.

I haven't read that file, but EVERY cylinder becomes more positively (or less negatively) buoyant as you breathe It down. The buoyancy CHANGE is 100% dependent on the change in the air volume. Compressed air has the same weight for a given volume regardless of what container you place it in. If someone tells you a certain cylinder changes less than another, then it either contains less air, or they are mistaken. Now yes, there are variations in the buoyancy itself of cylinders with the same capacity, but that difference is true both at the start AND at the end of the dive.

that's an old chart, notice the dimensions on that chart between the two. The tank pictured at the top is a 7.25" tank.
The current specs are here. Notice that all tanks of the current series start with S as we said above and the only 8" OD tank is the AL100
L6X aluminium SCUBA cylinders
 
FWIW my Luxfer Neutral 80 has S80N stamped on it and AL3300 for the service pressure.
