A lady down in Louisiana showed me how to make gumbo.

First you make a rue. Put vegetable oil in a pot and start heating slowly. When the oil is hot you start stiring in flour with a wisk. You stir and add flour until you have a light brown paste. To this you add water until you have a brown stock.

To this you can add anything that you would find in soup. Two of the ingredients must, however, be sliced cooked sauage and ocra.

I hate ocra. But a little bit thickens the gumbo.
