Which one would you get? The Ikelite DS160 or the DS125? Is there a significant difference which justifies spending twice as much on the strobe?
I may be able to start with 2 strobes if I decide to get the DS125....
What are your thoughts?

Either strobe is fine..But the 125 is no longer available,unless you are buying used.If purchasing used be aware that you may have to change the battery pack soon and that can add to the cost. I have 2 125 strobes and the older one need a battery pack after about 5 years.When purchasing a new battery pack to replace original one you probably will need a new charger too.The new pack requires it and using the old charger ay damage it.
 
The 160 has an LED focus light so can be left on much longer than the one on the 125 without draining the battery.

I had the same decision to make a few months ago and ended up going for one 160 instead of two 125s.
