How many folks think this is overkill for the following dive situations? I would be doing FL springs diving, NC coast, and quarry, and some warm water diving this winter on Blackbeards.

Should I skip this one and just go for the 5mm? I know a lot of it is personal preference I'm just looking for a knee jerk reaction and any personal experience from folks that have this hood.

I think you will do just fine with a 5mm.
The 7mm's are THICK and you'll experienced reduced flexibility and movement.
