How long before you started diving doubles?

yup, i'm still using Alu80. shore dive or shallow dive 100ft range.

Why so many?

Depends on the job at hand. Sometimes you want all the gas you can carry. Sometimes when diving wet, you want AL80s. Sometimes if diving off a boat, or you just don't want to carry around a bunch of weight, a set of LP85s or even AL63s fit the bill.

It's a heck of a lot easier to switch to a second set of doubles for your second dive, than go looking for a re-fill on your only set...

I have a set of double 80N's and a set of 100 stl.

I started using a BP/W at dive 11 and started diving doubles at dive #40. The first five min in the water with the doubles, i thought they were trying to kill me. 10 min later I thought they were great. I would reccommend that you try to find someone with doubles experence to give you a few pointers. If you cant, read all you can on here and start out slowly with a partner that can bail you out if you have trouble. The switch for me was fairly easy and I dive the doubles on all dives execpt when DM ing in the pool.
 
I started diving a BP/W at dive 5, and doubles around 100. From dive 50 to 100, I had a 40 cf pony slung "cave style" off my left side on the D rings, for redundant air. I love my twin LP 95's, and I don't think I'll ever dive single tank again.

If you dive with tech divers who use trimix the cost of helium and the logistics of getting a fill make it worthwhile for them to have more than one set.
There are divers who believe in a team concept so the ownership of a twinset over time becomes blurred. For example a buddy might use one of his buddy's twinsets on one trip and they might swap them around on another (the same kit, the same gasses (analysed correctly of course) etc

Multiple sets can be handy. I have a shallow and deep trimix set of doubles,which pays for itself in the gas that I don't have to dump,since I just keep topping on top. I have few sets with nitrox and air,which allows me the convenience to do my dives during the day,and not have to worry about a gas fill until later (not between dives).
