I've noticed every liveaboard ship starts with either M/V or M/S (maybe there are more that i've seen yet).

What do they mean?
Do they tell the class, size, and/or capacity of the ship in any way?

It's a designation and not part of the name. Some people use it, some don't, for example:

Sea Searcher II
Nautilus Explorer
Ghazala Voyager
etc.

or

S.S. Thorfinn (steam ship http://www.thorfinn.net/Specification.htm).

M/V = Motor Vessel
M/S = Motor Ship
S/S = Steam Ship

Nope, other than designating they have a diesel motor...

SY - Sailing Yacht
MSY - Motor Sailing Yacht
TES - Turbo-Electric Ship
TSS - Turbine Steam Ship
MT - Motor Tanker
TT - Turbine Tanker
MF - Motor Ferry

etc.
etc.

Roatanman, you're using old USS ship designations ie. CVA 67 (John F Kennedy) is now CV 67.

The USS Dwight D. Eisenhower CVN 69 is a nuclear propelled aircraft carrier. :)
