We went to Honduras for two weeks last year during whale shark season. We stayed a week on Utila at Deep Blue Resort which I would highly recommend, and then spent a week at Luna Beach Resort on Roatan which I would not recommend. It was fun to see the two different islands, but I would have to say we thought the diving better on Utila. Plus we got to see whale sharks, which is a pretty amazing site.

I agree about the AI, but the option for Kura Hulanda is there. They have 3 good restaurants, but of course I love going to "Dennys" just a 2 minute drive away for breakfast! I really enjoyed their Happy Hours. The entertainment was always good. A few nights, when we wanted just to hang around, we would shower in the evening, do happy hour, have dinner at one of the restaurants then head over to the casino for a bit. It is so tranquil and soothing to walk through the grounds at night back to our room hearing the "meditation" music through the grounds and listing to the water around the eco pool, et al. This is just MHO.

You might try Beach Club Colony, the sister resort to Spanish Bay. We stayed tehre last month, their onsite operator, Resort Sports LTD were good people, the staff was personable and friendly. The resort is old and dated, but the staff were courteous and friendly, the food was not great, but I never went hungry, even though I have special dietary needs. I enjoyed the diving, but the snorkeling off the beach was not spectacular. If you go, do not miss Stingray City, the most fun dive ever.
 
I am throwing this out there as I havent been to check it out yet (I'm working on it!), and havent had any clients go there yet, but this is a new resort on Utila that looks really promising. Utopia Dive Village - http://www.utopiadivevillage.com/

I have met with the owners and stay in regular contact with some of them - imagine everything you are looking for in a dive resort but in a romantic and more luxurious setting than what you typically find on the Bay Islands.

It certainly seems the ideal setting for two divers to spend their anniversary, but if there is anyone out there that has been, it would be great to hear their take on it first hand.

I would second Utopia Dive Village on Utila as a great place to go for your anniversary. We were on Utila in March (just before Utopia opened) and toured the place as it was in the final throes of construction. It is very plush annd according to the only review I found on it is also very nice and provides great service. The owners and operaters are very friendly and are doing all they can to make this new establishment successful. Its definitely the only place of its kind on Utila.

I'll chime in here too. I've not been to Utopia since it opened, but I do know the owners and own property just down the beach from them. The owners (from Texas) are great folks and very motiviated. Construction was top notch and grounds looked great. I am hearing good things and am glad that the reviews are positive. I'll try and post a bit more on the resort when I return from the island at the end of the month.
 
I would have to agree with the others and say consider Bonaire. I returned recently from my first trip there, and was blown away. It really is a diver's paradise.

I stayed at Buddy Dive Resort, the package included free breakfast and a truck rental (insurance is extra). They have a drive-thru tank refill, which allows you to dive 24/7, and the staff is very personable and helpful. The resort reef (Buddy Reef) itself is a nice dive, and very convenient for night dives (you'll be accompanied by several very large tarpon). The shore diving around the island is just ridiculous....drive your truck to any of the 60 or so divesites, gear up, and drop in on the most healthy and beautiful reef system you've ever seen.

I went to Anthony's Key (AK) in October '03, and have to way it was a great trip. Love the AI aspect, love the employees, adore the boats and the water, even in October, was spectacular. The cruise ships do use AK, but they keep a couple of boats dedicated to them, so the group you begin your week with on the boat are the same people you will be diving with all week, which creates a great atmosphere. I recommend paying a bit more and getting a cabin on the key (mini island) where you are almost left alone for a romantic getaway while you are NOT diving!

I would recommend considering this place!

Cobalt Coast Resort all-inclusive is just down the street from Spanish Bay and has a awesome dive operator with Divetech on site. Divetech runs 2 one hour dive profiles on the boats and offers unlimited shore diving at thier 2 shops. Plus, they have underwater scooter adventures and a rebreather resort dive with no bubbles. The owners live on site and will cater to your needs. The reefs in front of the resort are some of the best in the Carribbean and you can dive at any time of day or night.
