and have a few questions.

One, does anyone bring their small (or large!) dive knives?

Two, (this is a stupid question, I know) Do they have one gallon water bottles on the island? If not, I guess I will bring my own.

Three, any suggestions for truck rental? Any particular company that is reasonably priced and more reliable than others?

Four, any suggestions for naturalist and photography courses? We would love to learn how to find some of the most elusive creatures... and photograph them!

I may think of some more questions, but for now, thanks in advance! :)

Dive knives are allowed; if you normally dive with one, might as well bring it. As with almost anywhere, there is the small possibility of encountering fishing line which could pose an entanglement issue. If you do not normally carry a dive knife, I don't think you need to get one for Curacao.

I can't say I have ever bought water there in 1 gallon sizes but I am sure they are available.

I can't help on truck rental because I have always rented a truck through the place where I have stayed. Where are you staying and have you checked with them?

Are you taking about elusive creatures on the land or in the sea? I am sure many of the dive ops offer photography courses if you need them. If speaking of land animals, this may help some:
Curacao Wildlife- Curacao Nature- Curacao Exotic Animals, Nature
Curaçao Actief - Indigenous Plants,Trees, Animals and Birds
