Your tank is to high if it is hitting your head or you need to wear a hood to protect your head--it is to high.

You can lower the tank by dropping the upper STA/cam band to the lowest hole. If that is not enough then drill another and drop it lower yet. You really need only one cam band but the two piece STAs are not going to work by themselves and nobody to my knowledge produces a light weight single piece with a single central located cam band slot. I experimented with one and it worked well--home made.

Regardless of the instructors help fitting your rig--it is your rig---you can also lower the entire BP by increasing the shoulder harness loop length slightly, shortening the crotch strap.

If I lean my head back in my singles rig, my head will touch the 1st stage as well. IMO it's just something that you have to get used to. With a BP/Wing everything is more snug against your body therefore the tanks not drooping down as with a standard BC. Also having that yoke 1st stage adds to that as well. When I'm using my DiveRite regs on my tanks with Din valves then I have to tilt my head way back before it touches, but with the yoke on it with rental tanks then it is right by my head.
You shouldn't have to cut new holes on your STA, you shouldnt' have to only use only one Cam band, you shoudn't have to have the shoulder straps so loose that the rig is riding low on you, if that's what you want then switch back to a standard BC. You don't want your valve so far down your back that you can't reach it with your rig on, and to have the valve/1st stage in such a position that it's lower than your head, or your tank is turned out of place so the 1st stage is off to the side is IMO out of place and wrong.
It would help alot switching to DIN, other than that, you just have to get used to it, and besides you shouldn't be tossing your head around that much during the dive to where you are banging your head on the 1st stage in the first place, with proper trim your head should nearly be resting up against it the entire dive.
You could always switch to doubles, and elimitate the problem :D
