I'll be diving Grand Cayman in late September (23-30) 2-3 dives per day, at least 1 or 2 night dives. Depth around 60-75 ft.
Does anyone have an estimate of the water temps at that depth?
Wet Suit thickness? 3mm or 5mm?

I just got back from there. Water temps about 85, no noticeable change at those depths. I was comfy in a 3 mm suit, although most on the boat wore less. I was doing five dives daily, though. (A quick search indicates it might be a degree cooler in September.)

I dove there late August. Water temp 85+. No severe thermocline so even at 100 feet down the temps were OK. I dove with just a 1 mil jacket and was comfy although I just did two morning dives a day.
 
Personal decision but at those water temps 83 + I dive all day in shorts and rash guard, maybe a 2 mil shorty on the night dive.
 
Just checked my dive log - Sept and Oct were 85 degrees at depth. I dive there all winter and it hasn't been below 80. I dive a full 5mm but as I've posted elsewhere, I have seen the range of protection go from no exposure suits, to 3mm shorties, to my 5mm, to a dry suit (!) all on the same dive.
