Looking for input on a good, but not overly expensive destination for a 7 day vacation. All-inclusive is a must. We've been to Akumal so we want to try somewhere else this year.

I could, and have, spent more than a week snorkeling at Ho'okena beach on the Big Island. Amazing stuff, dolphins, bill fish, turtles, whales (in season) good coral, lots of fish. You can camp right there for $5.00 a night per person, or stay at a local B&B or vacation rental.

Since you really want an 'all-inclusive', what's your top limit on the budget? In re to snorkeling, would you prefer destinations with good shore-entry spots? If you're planning on going every day, the cost for boat-access sites starts adding up, found that out when we went to Punta Cana(DR) a couple of years ago. Luckily, a friend hooked us up with one of the water-taxi guys who knew all the good spots, and $50 for a full 2hrs at the site(boat stayed) was a great price. Still, five days of that, and you're looking at an extra $250 or more, ... just something to consider.

We found Roatan to be a much less costly snorkeling vacation destination than our other regular Caribbean haunts. There are some AI and partial options in the West Bay Beach area (Infinity Bay, Henry Morgan, Mayan Princess, etc...), but they are not on the same quality level as many resorts in Mexico and have limitations. Snorkeling was excellent.

Shore entry is a must. The AI would be nice as the GF has Celiac Disease (can't eat wheat gluten). AI's typically offer her more choices for food, especially in countries where the grain of choice is corn rather than wheat. Budget-wise, let's say around $1200 per person. We've done Maui and the snorkeling was so so. Is the Big Island that much better?
