Every summer I usually go camping and diving up in Morrow Bay and San Simeon. The bay itself is fun, for there are usually an abundance of varied sea life not to mention the adorable, sometimes elusive sea otters and their 'pups'. Viz isn't that good, but still a fun dive.
Last summer, we dove Moonstone. What a mistake. Went out...viz was so bad, could hardly see our hand in front of our face. We quickly turned around and enjoyed a nice lunch in Cambria instead.
If you're an experienced diver* and in pretty good shape, Jade Cove is a cool place to dive. You walk down a long path from the hiway, then hike down a steep cliff face to the dive site where you have to step over and around several boulders onto a 'mile high' pile of kelp that is loaded with lots of bugs. If you can get past all of that, getting into the water is pretty easy.
The next difficult part is getting past all of the heavy kelp at the surface. Lots of it. Bulbs bigger than softballs! Go towards the far rock. Viz is better, and there is a cool swim through. Look for bits of Jade as you dive. My friend found a nice sized rock 2 years ago that was appraised $$$. Mostly, you will find little pieces of either green or black jade.
Lots of cool marine life and nudibranchs.
Downside of diving central coast: lack of dive shops (nearest is SLO) and emergency services (especially Jade Cove). More like diving down in Baja.
