In Cozumel, Blue Angel Dive Shop has a combo boat you can book that has divers and snorkelers. They are a great shop very accomodating.

In Cozumel, we did the same thing that you're planning. We used Eagle Ray Divers.
http://www.eagleraydivers.com/ They were wonderful. Smaller boats, very personalized service, and reasonable prices. We would definitely use them again.

In Cayman, you can do a guided shore dive at Eden Rock, while the girls snorkel. We used this outfit, http://www.edenrockdive.com/ The snorkeling is free, if you have your own gear. Very convenient and close to the tender dock. Though I understand it's not the best that Cayman has to offer, the diving was excellent. Please feel free to PM with any questions that you may have.
 
Another choice is going to Sunset House in Grand Cayman. We planned on doing that a few weeks ago but rough seas prevented us from doing that. The advantage of Sunset House is that they will let you use the pool for free. It is a short cab ride away past Eden Rock.
 
I second Eden Rock. You can dive right out front and the kids can snorkel safely. The reef out front of Eden Rock isn't the best but it's not the worst either. It's easy walking distance from the Cruise Ship dock as well. They can rent you whatever gear you need right on sight.
 
You might try Dive with Martin. I believe they still pick up right at the cruise ship dock.
 
I'd suggest you stay away from the Cruise scheduled excursions. We did one last week at Grand Cayman and it was not a very pleasant experience. Too many divers on one boat (27 or 28) for too few DMs (3). It was like hearding cats.

The 1st dive was an 80' wall dive with 3 groups of 9 or so. First, the dive was deeper than my daughter and I should have been on given our experience. Nobody said anything, and I didn't either. Probably should have. Shame on me for sure. Second, I made the mistake of being the last one to begin my descent. Combine that with being worried about my 18 year old daughter (who can be a bit headstrong at times) and I began descending too fast and couldn't equalize. Given the # of divers, the DM gave me a very short time to equalize and get down to 80'. I think it was 3 or 4 minutes. I couldn't and he sent me back to the boat. My daughter continued right on down and was very worried about what happened to me. She made it through the dive OK but didn't enjoy it because she was too worried about me. Yes, she got too far in front of my and we shouldn't have gotten separated. Believe me, we had that discussion back on the boat! But if the dive had been organized as a guided buddy dive with smaller groups, I would definitely have been able to get down and we would have stayed together. I just needed a more relaxed pace being my 1st dive since Oct. I got down fine on the 2nd dive.

In the future, I will absolutely opt for the more personal experience and book my own dives directly. I'll pay more for a better experience. Just make sure the operator knows when you have to be back to the dock or tender and leave yourself an hour or so cushion and you should be fine. Also, make sure they know your dive experience level and schedule the dive accordingly.

Thankfully, everything worked out for us. But it could have been a disaster. Believe me, I've learned from it and will never repeat that experience again.
