that's a tough one! I would say Bonaire just because you can get a condo (most hotels are condos) with kitchen and cook for yourself. That way you KNOW what you are getting. Take lots of food items in your luggage, too.

I would be afraid that at most restaurants anywhere you wouldn't be able to find out for sure what is in each dish. Most waiters don't really know and probably would tell you anything they think you want to hear. At a larger resort in Caribbean you might be able to get buffet style meals where you could pick and choose items - but then you never really know what has been added.

I agree with a condo and bringing some of your own food, especially stuff like GF pasta. As far as eating out, I'd think you would have better luck in more populated mainstream places where English is the official language (say Cayman), than someplace fairly small/remote or where English is most peoples 2nd or 3rd language.

My MIL is gluten intolerant and even here, you run into waiters and restaurants that understand the issue perfectly and can handle it, ones that want to be helpful but are still unclear on the idea no matter how it's explained, and ones where it's hopeless.
 
Actually, I live on Bonaire and follow a gluten free diet. The great thing about the restaurants is almost EVERYTHING is cooked to order, so I can specify exactly what I want. I do suggest bringing a few items with you like the pasta, I don't get pasta that often, only when I go back to the US and bring it back with me!
