I've done Galapagos in October and in May. This is a generalization but October was colder water and less visibility but more sharks, whale sharks and generally bigger schools of fish. May was warmer water, better visibility but less stuff to see. My 2psi.

If you're looking to see humpbacks the dive guides have told me that the season is June through August. I've been there in early March and saw a staggering number of hammerheads.

Yes, it does. Temp., and probability of seeing whale sharks vary. I'll link you my research notes and trip report from my one trip there.

No guarantees. I went in 'manta season' and saw one manta (better than none!) on the very last dive (a blessing), but I saw no whale sharks (and it wasn't the season for them).
 
I’m heading there in just over a week to start a livaboard on 9 June … please tell me it will be fab 🤞🤞🤞🤞
 
We were there for two weeks from late March to early April. Although we weren't on a liveaboard, we did four days of diving from San Cristobal. The water was 72-74F, with an outlier at 78, but we were south of Wolf/Darwin where it's warmer. We saw one hammerhead outline at depth, at Leon Dormido; folks on the same boat who were snorkeling saw a school of more than 50 at about 20'. But the diving was terrific, as were the islands as a whole; not much rain, high temps around 85F.

I've been pondering this same question as I look into a trip next year. I'm currently thinking May, in hopes of getting the last of the manta/hammerhead/warm and calm water season, and maybe the beginning of the whale shark season. But I'm also going to try to keep my expectations low enough that they're likely to be exceeded, and plan on coming back again someday for whatever I might miss.
 
I will be on the Calipso from 9 June for 7 nights. I am sure the diving will be good but I am desperate to see hammerheads. I spent a week on Layang Layang in 2018 which I thoroughly enjoyed but it was a long way to go to only get a glimpse of one hammer. I’ve been lucky to seen mantas and whale shark a plenty in my dives, but on,y the one hammerhead and I love sharks.
