Do:
Take your sea sickness meds.
Bring your own safety sausage
Bring a dive light and a tank marker light for the night dive
Bring a dry bag for stuff you don't want to get wet
Bring gloves
Listen carefully to the briefings
Be ready to get in the water when the dive master says the pool is open. This is not the time to start getting ready to get in.
Drink water
(IMHO) Dive nitrox I think its worth it
Have fun

Don't
Get lost. It's easy to do
Run out of air
break the rules
Forget your gloves
forget to drink water

In addition to TwoBit's post.....always have a plan B, especially if you are driving any distance. The go-no go call is made at noon of the day of departure. If you are flying in or need to leave before noon to drive in, you'll need an alternative plan.

The Sea Searcher and the Gulfdiving boats, Fling and Spree, start operations in March and usually go through October. July, August and most of September are the months with the most consistant weather. Early spring is especially iffy. So when you sign up, don't be surprised if it gets cancelled. My first trip was my 13th try!
 
Fling/Spree require primary light that is at lease 4 x C-cell. AA's OK for backup only.

The ropes are your friends, use them.

The ladder will beat the S%&T out of you. Respect it when it is bouncing.

I like to get up about 15 minutes before the wakeup call when 30 divers line up to use 2 heads. Gives me more time to read the morning paper.
 
Ahh that's my favorite part.... the ladder.......or as I like to call it the Bucking Bronco! Best to approach it knees first when the boat is low in the water. It's an art form to pull yourself up and look cool at the same time.

There's Offat's Bayou in Galveston but from what I hear it's not much better than the local lake diving we're all used to, only salty. Well, from Freeport, there's Twin Lakes in Manvel (1 hr), Blue Lagoon in Huntsville (3hrs.) and Lake Teavis (3.5 hrs) in Austin. That's not exactly local but the only 'decent' diving.

Instead of diving, I'd suggest Moody Gardens in Galveston. The aquarium there is really cool and the Imax theater is always nice. The Rainforest pyramid and a paddlewheel boat trip is also fun.
