1) the wing folds upwards around my tank, is it meant to do this?
A little bit, yes. What else can it do? If your wing is oversized it will "taco" the tank, which isn't a good thing - the air inside the wing will move around too much and is hard to dump. I'm assuming that you've matched your wing to your tank configuration and don't have, for instance, a 65 lb Explorer wing mated to a single AL80.

If I were feeling especially saucy, I'd ask you if you want to kneel on the bottom while diving? I'm in a fairly peaceable mood, however, so I'll simply note that this is a fairly common comment from folks switching to wings from stab jackets and is actually one of the reasons that wings are better - they tend to keep you horizontal in the water instead of vertical. Too much of a good thing is a problem, of course, and adjusting trim in the water can be a slow process at first. The most streamlined position for swimming is actually just slightly head down, so some of us learn to re-orient this way.
I think you'll find that it will be helpful to spend some pool time with someone who has a fair amount of experience diving with wings and can lead you through the process of making the adjustments, both mechanical and mental, that are going to be needed. This isn't a time for solo diving, you need a set of experienced eyes to help out. Otherwise, you're going to end up tired, frustrated and forced to reinvent the wheel.
