I asked this question in "Basic Scuba Discussions" and didn't get much response so I thought I'd ask here.

My wife and I are going to GC in late December. We do only shore dives. We were there in early August and used no wetsuits.

What do we need as far as wetsuits for late December? I usually don't get cold. My wife did toward the end of the dives in August.

In late Dec. the water will be about 79 or 80 degrees. You will have to take it from there; I don't know your personal susceptibility to cold. Some divers wear 7 mil., some 5, some 3, and a few of us don't bother with wetsuits at all.
