Looking to make a trip up to Dutch Springs this summer and wanted some info from people that have been there. Was going to bring wife and 14 month old child. Are there activities for them to do there? My daughter likes the water/beach. Do they have a pool or a beach for use?
 
Yes, there are activities for them. Lots of swimming, etc. Also there is the Lehigh Valley Mall, Shops at Saucon Valley, Crayola Factory tour in Easton, and lots of other attractions nearby. If they don't want to swim or get bored easily, find some local attractions. Dorney Park is an amusement and water park, but may be too much for your 14 month old.
