Can anyone suggest any good places to get away, where my fiancée can swim with dolphins and I can get in some great diving in?
 
They also have one in Palau. It's actually funded by the president of Sony. He visited a dolphin swim once with his autistic child, and the child responded so favorably, and seemed to improve for days afterword. So Dad funded building several of these, under the condition that they try to make expenses by educating and charging tourists, but any children with disabilities get to swim and interact with them any time for free.

They had special build lifts that could be lowered and raised for children that could not swim... It was pretty neat.

But Palau might be a bit far if you didn't plan on going half way around the world for a dive trip... but the diving's great!
 
For the canned doplhin experience, I'll second the Anthony's Key nomination.

My wife and I did the dolphin dive with Anthony's Key, and it was great. We heard some comments that the dive offered less interaction than the snorkel encounter, but I don't see how. As far as the dolphin dive goes, you first meet the beasts in their enclosures, and interact with them while sitting on a platform. They do the typical dolphin tricks, and the trainers feed you dolphin facts. Then you board a boat for a 70 foot dive, open ocean, sandy bottom. The dive lasted about 45 minutes. Two dolphins interacted with the divers the entire time. We got to watch them chase flounders and a baby ray, scratch themselves on rocks, and show off their underwater skills to the clumbsy humans. You could pet them, rub them...basicaly anything but formicate with them. You can take a camera on the dive, and we got some great pics. Cameras are not allowed on the snorkel encounter. Cost for the dive was a reasonable $125. We stayed at Coco View, and I think the price was higher for non Anthony's Key guests. There is also a videographer on the dive, and a nice quality DVD ran $35.

While we were there (June '05) Anthony's Key was building a second operation for dolphin dives and snorkel encounters away from their resort. The second operation is to host guests from other resorts on Roatan.

We have tried both...

The dolphin snorkel offers far more contact. It's cheaper, too. They will take snaps of you with your cameras, but they don't want folks cuddling up with rough objects in hand. And you will hold them, etc. on the snorkel.

My SO has done both, but now prefers the frequent live interaction found when diving off of Iron Shore/First Bight on the S side of Roatan.

CowJazz mentions CCV which is a great place for snorkelers.
