I just changed my plans from arriving on grand cayman island on Friday to Sunday. What I am wondering is since Gustav will be long gone by then will I have bad diving conditions?

If Gustav is "long gone" by then, AND IF there is no other Tropical Storm or Hurricane in the area, diving conditions should be fine. Typically, a major storm will stir things up so the viz will be reduced for a couple of days. The dive ops will need to spend the day after the storm retrieving their boats from the mangrove swamps (that's where they are often put, for safety) so you will have to shore dive on Day Storm + 1.
