I found a week at Coral Sands in Grand Cayman for a week in May 09. I really can't find much info about this resort online. Anyone?? It looks like a small place but hey it's on Grand Cayman! Mostly I'm interested in any eating places close by, snorkeling places, and shore diving choices close by.
 
I've stayed there, Coral Sands Resort, Grand Cayman, Cayman Islands, many times and loved it. I've always rented a car, but it's well within walking distance to George Town. Shopping, dining, and some night life. Just outside your door is a small swimming pool and beach on a small cove... great snorkling with tons of gorgeous parrot fish, tarpons, etc. Just be careful as there are sea urchins which will be painful if stepped on. You could probably find a shop that will rent you some tanks and you could explore it on scuba. The pictures on the website are a good representation of the condo. It had been renovated about 4 years ago - hurricaine damage. Across the hwy is a grocery store. A bit expensive, but less than eating out. They're closed on Sunday, so be sure you arrive Saturday with plenty of time to buy groceries. In the opposite direction of George Town towards 7 mile beach there are some liquor stores. With a full kitchen and bbq on the site you can't go wrong stocking up.

Just got back from a long weekend. Stayed at the Grandview which is not too far from Coral Sands. I liked the food at the Wharf. Not cheap though. Italian place right in town on the water was good too.

I liked staying in a condo with the convenience of the kitchen for easy breakfast and lunches.
 
The Lobster Pot restaurant is about a 30 second walk south of Coral Sands. 30 seconds fiurther is an Indian restaurant if you like your curries! 30 seconds past that is Burger King!! The Wharf is a five minute (maybe!) walk to the North. Kirk's Supermarket is right across the road and best of all The Lobster Pot Dive Center is right next door to you underneath the restaurant.
You can rent tanks right there and shore dive on Cheeseburger Reef or take the tanks back and dive right in front of your condo!
There are 3 boat diving operations working from the Lobster Pot Dive Center; Deep Blue Divers, Off the Wall Divers and of course Wall to Wall Diving. All 3 specialise in small groups with personalised service so drop by and have a coffee and a chat when you arrive to discuss the dives you want to do.

All in all Coral sands is a great location with lots of great snorkelling and diving nearby and plenty of restaurants in very easy walking distance.
