I have used the Canon EOS M extensively for the past 2-3 years. I was very happy with the image quality, but the AF was slow when using the EF-S 60 mm macro lens with the adaptor (although for wide-angle, the native EF-M 11-22 mm lens was fine). I was really hoping that Canon would come out with a new mirrorless with improved autofocus, but I think the EOS M3 has only slightly improved autofocus when using the adaptor to use Canon SLR lenses. If you like Canon, I would wait until they come out with a new mirrorless camera with dual-pixel AF (rumoured to possibly be released this year), and a native macro lens (which hopefully will come too). But if you are looking at buying right now, Olympus and Panasonic are probably better mirrorless options.
 
I agree that the EOS M3 is not the best mirrorless option for underwater, but the option to use the Canon 60mm, 100mm, and 8-15 in the Nauticam is pretty interesting.
