Ok, when taking a macro, how do I manual focus using the canon housing without a thingy to run the wheel?

Press button 6 to switch between manual and auto focus.
In Manual focus mode hold down button 1 then push buttons 7 and 9 to change the focal distance.

The simultaneous pushing of button 1 along with some of the other buttons is the alternative for some camera controls for not having a dial on the WP-DC28.

Similarly.... is there any way I can control aperture and shutter speed on Av and Tv priority modes? Without the thingy to control the wheel?

Press button 5 to select aperture or shutter speed.
Hold down button 1 then push buttons 7 or 9 to change value.
 
Basically "Hold down button 1 then push buttons 7 or 9 to change value." is equivalent to turning the wheel in all cases.

If you haven't already, I would suggest setting up pressing button one by itself to give you a custom white balance.
