Jonathan,
for more info on lenses, quality and value, have a rummage on www.dpreview.com. In the 8 months or so since buying _my_ 10D, I've been reading the forums and reviews there with some regularity, and learnt more about lens measurements, terms and 'quality' than I thought possible.
What I would say, as a neophyte 10D user (and also u/w, but with an S1), is.... if you're really just getting started, be a little careful with any opinions you're given. the 10D is a very good camera, and justifies 'good' lenses.... and these can and do cost more than the camera. You need to be sure you can justify that sort of expense.... and when the 'pros' are talking about sharpness, tack, 'bokeh' or anything like that, it's because their livelihood depends on it....
There are some good links off dpreview to independent lens reviews, with some examples of the sorts of difference spending 1000 or 5000USD can make for the 'same' lens spec.....
Have you done any u/w photography? I'd try and borrow/rent an u/w kit setup, to get the feel for what it will do, before spending loads of cash. Either that, or get any decent 'cheap' short zoom (I think Tamron do a good, fast (f2.8 or so), 'wide' zoom now), at least until you're happy with the pix you're getting. I found (am still finding) the whole u/w learning curve quite steep.
good luck,
h.
