I've never stayed at Sandals but I'll also throw my recommendation in for St. Lucia. I really enjoyed the diving; lots of steep cliff walls and animal life. It's also probably my favorite island on land as long as you are willing to rent a car and explore a little. Very mountainous and jungle-y compared to most of my other dive vacations. We had a nice mix of diving and hiking.
