See what happens when you take them somewhere there is nothing to do but dive? They end up diving! Cheaper to go somewhere with other options than buy all that new dive gear.
 
Three years ago, my Gf went to Henry Morgan as a non-diver and got tired watching folks getting closer to the marine wildlife when she was restricted snorkeling at the surface. on day 2, she was beginning her DSD and obtained her diving certifications locally upon her return. She enjoyed HMR facilities even though it had some limitations in terms of food, etc. The place was friendly and cozy. We are already booked to go to Roatan for two weeks in Feb 2013. This time, we picked the Mayan Princess.
 
Cocoview and Barefoot will not serve the needs of the rest of your party. I perform every Friday night at CCV and normally would highly recommend it over almost all the other dive resorts for hard core divers, but in your case, CCV and BF Key will not serve your non-diving needs due to their facility and especially because of their locations. Shawnda is correct and Infinity Bay is just completing now a large restaurant and spa and guest services complex that will be fully operational by the time of your visit. Alternatives for your needs are Mayan Princess and Paradise Beach Club with their new hotel. I have lived here 5 years and spend much of my time at all of these places. In addition to Trip Advisor, check their individual web sites and FB pages as things change here rapidly and often.
