I have a 2016 Bauer JR II, gasoline model. It last had it's maintenance 3 years ago. At the time it had about 60 hrs on it. I then drained the fuel and put it in dark and dry storage for about three years. I am now going to start using it again.

What would you advise in the way of steps to put it back into service?

The local Bauer office here has quoted a 500hrs service kit, oil change, filter change, air quality test and 4 hrs labor. The 500 hrs kit seems a bit overkill and the rest I can do myself.

I am thinking replace the P21 filter and also the oil given the 2 year recommendation in the maintenance section.

Take your local Bauer Office engineers advise and drop it off for them. They clearly know what they are taking about its good practical advise. I'm not going to advise or encourage you further after 3 years sitting idle without doing the correct long term inhibiting procedure you will need to know a heck of a lot more than we would discuss on an open forum.

3 years in at the dark uninhibited be lucky I guess maybe I could add check for spiders
