tulamben or padang bai maybe good choices for a day dive trip and it depends where you stay. many dive operator offering different trips. check out at Bali Diving - Bali Air Diving Academy or Absolute Scuba they both professional and very well organized dive operator.
Agree that one day is definately not enough..!
I'll suggest Tulamben. It has wreck, jack, napoleon, baracuda and nice macro.
Manta Point, to see manta depends on your luck. If no manta, there are less interesting stuff there.
