Depends on whose course you take.
PADI and NAUI have (or at least did have) a course labeled "Advanced Open Water" and an "AOW" card from them means you've done the course successfully. SSI has an "Advanced Open Water" rating that isn't tied to a specific course, but is awarded after completing four specialties successfully and 24 logged dives.
From your screen name, I'd recommend you take the SSI route, and take Spearfishing, Nitrox, Deep Diving and Fish Identification as your four specialties.

PADI's AOW course is five dives, each with a different focus. Deep and Navigation are required; some shops have others that they require, but in general you'll get some choice for the others. In the AOW course I took we did Navigation, Night, Deep, Underwater Photographer, and Underwater Naturalist.

Rick is right about not getting tied down to one training agency. If your instructor knows his stuff about spearfishing (that will cover fish ID), deep rig diving, nitrox and navigation, I'd stay right there. If he doesn't, ask the some of the Hell Divers. (Look up LASeacat on Spearboard.com) Check out www.helldivers.org

There will be five dives, including a "deep" dive and a "navigation" dive, and then three more from a list that includes night diving, fish identification, and a bunch of other choices - those choices are usually worked out in advance with the instructor and the students in the class.
 
I have been struggling with the pros and cons of an AOW certification.

I have been fortunate enough to have been diving for several years, have logged more than a few open water dives, have been deepish (150'), have been drift diving in Cozumel, night diving, am Nitrox certified, and feel very comfortable using my skills underwater.

What, besides having another plastic card that keeps the air conditioning on when I'm not in my hotel room, are the advantages to AOW certification?

It's a requirement for the PADI rescue diver class, or so they say so.
