I'm a single looking for somewhere to go on Feb. 11th (out of Memphis). My wife is usually along so I'm at a loss as to where/what to do. Have a dinner on Sat night 2/10 & want to fly out of Memphis to somewhere Sun AM. I guess Cozumel will be as good as any place since I can't find a liveaboard that departs on Sunday. Any suggestions ??

Well, is it Cozumel or a liveaboard?
Caribbean liveaboards, as far as I have found, depart on Saturdays.
"somewhere Sun AM" will put you comfortably in the Caribbean "somewhere 10 to 12 hours after that". You could maybe do this- if you could get the liveaboard to schedule their first dives near their port of departure (or near your airport of entry), or you could arrange to be ferried out to the liveaboard. I would just do the helicopter 007 thing.
In Asia/Africa etc the liveaboards shove off on Sunday, so if you are really quick you might be able to do one of those!
Go to Cozumel. Do a liveaboard when you can be at the dock at noon on any given Saturday.
