PJ Stoops is well-known in the Houston food scene. Some of you may remember him as the chef who, along with his wife Apple, opened and ran the Heights-area Thai restaurant Foreign Correspondents, named as one of 'America's Best New Restaurants' by Bon Appetit in 2016. Others may recognize the same duo as the authors of Texas Seafood: A Cookbook and Comprehensive Guide. He’s an expert on bycatch and sustainable seafood and continues to forge his career in the seafood industry. We’re both lucky and honored to be hosting PJ as our July 20th speaker.
