Seeing as you're in NY, for something close to home you can actually still dive the St. Lawrence with decent comfort in November, the water stays relatively warm compared to local ocean diving through the Fall.

My biggest tip for starting to dive doubles: go dive them A LOT. Lots and lots of shallow easy dives. Practice, make adjustments, take notes, do more dives, repeat.
If you're diving a drysuit or thick wetsuit, you want steel not aluminum doubles.

No noticeable difference in buoyancy. It's a little bit colder and costs a few extra bucks. I do it on mild trimix dives when I don't want to carry a separate suit inflation bottle.

I hate to be that guy on the internet attacking the premise without answering the question, but what's the issue with storing one packed scrubber for use over a couple of short dives? Why would it be so "impractical" to leave it sealed in the unit or a labeled drybag?
Sometimes I pull my mask up on my forehead. It's a perfectly reasonable place to put it, sometimes.
I don't put it up there when it could get easily knocked off and lost, eg. surf entry/exit or floating in deep water.
More often I pull it down around my neck, where it is much more secure, but...
Small companies generally make the best technical diving equipment. More innovative features, higher build quality, fewer corners cut to pinch a penny. Big companies are just as (if not more!) likely to end support for an unprofitable product as small companies are to die.

Some wings need them, some don't.
I use one with my Dive Rite EXP. My Apeks WTX-D30 doesn't require one, it has little tank stabilizers built in. This keeps the tank closer and feels more stable than the EXP with STA.
