Im new to cameras but what would this option offer vs just one?

In general, yes. But it's not just more light that's important, but the ability to provide light from different angles, at different "strengths".

One light can provide most of the illumination, while the other (set to a lower light output) fills in the shadows caused by the main light. Or you can illuminate the forground object with one, and the background with the other.

If you just used more light, you'd just end up with really overexposed pictures.

And I expect with two lights, the DC1200 would float like a cork...
