Which Red Sea live aboard itinerary?

I'm having a hard time selecting a live aboard itinerary for our trip next May or July. Can anyone help me understand the differences (health and quality of the reefs, typical marine life, topagraphy, other considerations?) in these options:

blue o two Project Shark: Simply The Best

blue o two Project Shark: Daedalus & St Johns

blue o two Deep South

So far it looks like the Deep South itinerary is our 3rd choice, because the dive schedule seems to be all in the same area, on the other hand it seems more dives could be done on that schedule? I also like the idea that the Project Shark itineraries seem to be in a lecture/workshop format.

We are experienced divers so strong currents and challenging conditions are not a concern for us.

These are similar routes in my opinion as all of them go to offshore reefs with chance of pelagic animal encounters. It depends on your luck what can you see, we were in the St Johns area two years ago in May where we made two long dives with oceanic whitetip sharks, and saw manta, reef shark, turtle etc. Basically the reefs are healthier in these places than anywhere in the Hurghada area. Because of the water temperature I'd say the southern is the better...
I think simply choose any route and hopefully you'll be lucky. There are real differences mainly between the northern wreck routes and the southern offshore reef routes in my opinion but I'm not a pro just a simple dive traveler.
