I have a E-PL1 (and I guess it would be the same for E-P1/2), in the function button, we can set it up for a underwater function, as the icon of a single fish/three fishes. Does anyone know what that is for and how to use it?

these are UW macro and UW wide modes. They have different aperture limits so the DOF in macro would be high and in wide the aperture would be smaller allowing more light in and when the object is far away DOF increases so it is ok. Also ev correction is different.
Not sure about how much I would like these modes underwater. looks like I would be better off with just A mode and sunny WB.

thanks, i think it would be cool if olympus allow us to customize these two modes, but maybe not :(

I agree, but I think the purpose of the custom scene settings (from the maker's perspective) is to make the camera idiot proof -- allowing good shots in those special situations most of the time without requiring the user to know anything about aperture, shutter speed, white balance and so on.
