I did an older 5mm (a bit compressed at this point) for the week and was very comfy. Some areas out in the Bligh had a colder current on occasion but was mostly 80 on average. July is winter vs when I was there in April FWIW. No hood for me (hate them) but I think you should be fine with either a 5 or a 3 and layers.
