As I teach fishing and fly fishing to the Boy Scouts, I get to fillet a LOVE of fish. Yes, most of them are small, but there are a LOT of them. During National Jamboree it's not unusual for me to fillet a couple hundred fish in a day.

Now, I have used a number of different fillet knives of various makes and flexibilities. Yet, none has stood above the rest for me: until I tried one of yours. I love it. It flexes but not too easily. It holds it's edge for a good bit and the grip is great even when I am covered in fish guts! :D I know it's not your primary product, but I LOVE it!
