There's a very good book of research, "Deep Survival: Who dies and why" by Laurence Gonzales, that is a really good look at the same subject. The answer basically comes down to wanting to live and not quitting. Lots of really good and varied examples where the expected results were opposite of reality. (Moving instead of staying put when lost in the woods, for example.)
