I came across this special for single divers at Sunset House on Grand Cayman. It includes breakfast, 2 boat dives per day and unlimited shore dives - but they pair you up with a buddy so they don't allow solo diving.
I have never stayed/dived with Sunset House but I have visited the property including the Cathy Church photo studio and the beach bar. It seems like a nice place. But I have read both positive and negative things about their dive operation so if you are interested you should first do some research.

They are also offering a discount price for active, reserve, and retired military personnel so that is nice. I don't know if they would combine the military discount with the singles special.
