This skill must be done with your head in the water in case you are in rough surface conditions. I've been in a variety of rough conditions and haven't done it by the book yet. Maybe I just kept my mouth closed at the right times. Has anyone out there ever done this skill properly other than in a pool class?

I don't use a snorkel but I interchange my secondary and octo a couple times every dive. One, to make sure my octo is working and two, to get used to changing regs underwater. I just take a light breath, lose the secondary and put the octo in my mouth while lightly pressing the purge button to make sure air is coming in.
 
It is really nothing more than clearing your snorkel and that should have been part of you OW class.
 
The point of the exercise, more than anything else, is to teach a student something about airway control, and the need to purge anytime they insert a new mouthpiece.

After that, it's only moderately useful in terms of real diving.

It was. I'm just curious as to how many on SB actually did it by the book out of necessity while diving.

I tried to do a snorkel exchange several times after my OW class, but the LDS said they couldn't take it back.

I had a similar experience. The OW manual said we were gunna "remove and replace" the mask. I removed it and put it back on, but the shop just refused to replace it for me. Said it wasn't broken.

I do my snorkel clearing by the OW book every time I return from a dive. In fact my clearing is even more advanced as I use sulfuric acid to kill all the germs
