Hi Im John and will be diving in Kona last week of May with my daughter who is 14. Does any know if you can do shore nite dives to see the Manta's? Also which are some of the best places for shore dives during the day.

I am responding as my wife and I shore-dove the Big Island a lot in spring of 2009. This guide: Scuba Shore Diving Site Listing for: The Big Island, Hawaiian Islands will tell you the best shore-diving sites by far, and the information is accurate except for Kukio Bay, which is much more developed and harder to access now.
I would highly recommend:
Mahukona
Puako Village End
Alua Beach
Old Kona Airport beach
Place of Refuge

As far as Manta-sightings at night, there is no guaranteed spot to see them, even the boat trips don't always see them when they go out.
 
YMMV, I saw them during the day while I was diving at Puako and snorkeling at Hapuna.
