A 2-day Open Water class is not a standards violation in and of itself. It depends how the class is taught. A quality instructor can no doubt complete an Open Water class in two days with zero standards violations.
 
To answer the Original Post, a Discover Scuba dive is valid and not needing to repeat the classroom/skills portion provided the diver uses the same instructor for all following dives. Move to a different dive center, and the classroom/skills portion must be repeated.

It's worth noting with SSI you can become a certified Discover Diver that last 6 months then expires. Advantageous of this would be someone traveling on a week long cruise. They could complete it with us, then not need to complete the classroom/skills portion at their next stop.
